Add seasoning mix and toss again until coated. Carefully remove tray and rolls from oven. Place steak-poblano mixture on bottom roll and top with dressing (to taste), crispy onions, and top roll. In broiler pan, without the rack, arrange steak. Add water to pan and stir, scraping brown bits from bottom of pan.
