Instructions to make Ethiopian lentil stew:
- Heat Oil🛢️ in a pressure cooker and add ginger-garlic, and both onions. Cook till they are soft.
- Add the cumin powder, Berbere spice and salt. Mix everything.
- Add the red lentils along with tomato paste and mix again.
- Add in 1.5 cup of water or broth and cover and cook for 2 whistles.
- Once opened, simmer if for 4-5 mins, add in the spinach 🍃 leaves and mix till they are wilted. Adjust consistency as required.
- Serve it with Injera (Ethopian bread) or rice.
